de nieuwe snede

the new cut – 16th century material culture in the low countries

I am not a cook, I’m an eater. I’ll toy around with period recipes from time to time, but my passions are elsewhere. That doesn’t mean I can’t tell you where to go for Dutch recipes!

Coquinaria has a selection of middle Dutch recipes that have been translated into English. If you check out her index of recipes you’ll find several other Dutch recipes she has tried as well.

I am a huge fan of the sauces in Gent, probably because someone named Alijt owned the book.

There is, Het eerste gedrukte Nederlandsche kookboek  (The First Printed Dutch Cookbook) +/-1510

Kookhistorie has a recipes from different Dutch sources, though most have not been translated.

Finally, The Medieval Dutch Kitchen has redactions in English, though only about 4.
